Pavlova Co. is winning over Coral Springs dessert lovers with pavlovas, international flavors, and colorful treats.
Located at 7610 Wiles Road, Pavlova Co. has built its concept around pavlova, a dessert that owner Alejandra Cruz Mendoza describes as light and crispy on the outside with a soft interior, typically finished with whipped cream and fresh fruit.
Cruz Mendoza tells Coral Springs Talk that after a few months of service, she’s ecstatic that many regulars share her passion for the tasty treat and other favorites.
“The response from the Coral Springs community has been incredibly positive and encouraging,” Cruz Mendoza told Coral Springs Talk. “One of the most meaningful things has been seeing people come in to try Pavlova for the first time, then return with friends and family and share the experience with others.”
That local connection has extended online.
According to Cruz Mendoza, Coral Springs is the largest city among Pavlova Co.’s Instagram audience, while the account has generated more than 276,000 views and added hundreds of followers in the past few months.
“Social media has been very important for us because Pavlova is such a visual and sensory product,” Cruz Mendoza told Coral Springs Talk. “The crack of the meringue, the cream, fresh fruit, pistachio, chocolate, and all of the finishing details translate beautifully through photos and video.”
Still, she said the goal goes beyond collecting views and followers.
“Our real goal is to turn that attention into visits, purchases, repeat customers, and long-term relationships with the community,” she said.
The shop itself was designed with the same visual appeal in mind, featuring a pink aesthetic, colorful desserts, and a presentation that makes a visit feel like more than just a stop for something sweet.
Cruz Mendoza describes Pavlova Co. as “a little journey around the world through flavor.”
The menu combines pavlova, which has roots in Australia and New Zealand, with Italian-inspired cannoli, French croissants, Latin American obleas, tropical fruit desserts, and Dubai-inspired combinations featuring pistachio, kataifi, and chocolate.
“We wanted it to feel feminine, joyful, different, memorable, and full of personality,” Cruz Mendoza said. “From the pink aesthetic to the way the desserts are presented, every detail is meant to make people feel like they are stepping into our own little world, our ‘A Little Piece of Heaven.’”
The restaurant has also expanded considerably beyond its namesake dessert since opening.
Customers can now find multiple pavlova variations, obleas, fruit-based desserts, coffee and lattes, croissants, selected sweet and savory items, tropical beverages and rotating desserts.
“We started with pavlova at the heart of the brand, but customers have also really embraced the broader experience,” Cruz Mendoza said. “It has shown us that Pavlova Co. can be much more than one dessert.”
She said introducing customers to a dessert they may not commonly find at a traditional bakery also gives Pavlova Co. an advantage.
“Someone may come in for one product and then realize there are many other flavors and experiences they want to come back and try,” she said. “For us, the goal is not only to create a great first visit, but to continue giving customers reasons to return again and again.”
More reasons could be coming soon.
Cruz Mendoza said the company is exploring seasonal flavors, limited-edition desserts, collaborations and special experiences, although specific fall offerings will be announced only after they are finalized.
Ultimately, Cruz Mendoza said the company is trying to create something larger than a dessert shop.
“The goal is not simply to sell more desserts,” she said. “We want to build a brand that people recognize, remember, love, and eventually want to experience in many different cities.”
Pavlova Co. is located at 7610 Wiles Road in Coral Springs and is open from noon to 8:00 p.m. Tuesday through Sunday.
