Tarka Karahi and Kabab were ordered to close following an inspection prompted by a complaint that revealed numerous violations, including a rodent infestation.
The July 17 inspection of the restaurant at 7881 West Sample Road revealed 17 health violations, including evidence of rodent activity, improper food handling, and unsanitary conditions.
The most severe violation involved rodent activity. Inspectors found rodent droppings under a small hand sink by the floor mixer in a far corner of the kitchen, which an employee quickly cleaned.
Other issues included improper food thawing and several instances of standing water. An employee found a container of fish thawing at room temperature on a back prep table, and it was immediately moved to a walk-in cooler.
Additionally, inspectors noted standing water under a hand sink and a triple sink at the far end of the kitchen.
The report notes that the cleanliness of the kitchen was a primary concern. Inspectors reported that the floor under the cook line was soiled with debris and grease buildup, marking it as a repeat violation. Inspectors also noted that the floor mixer bowl had a significant food debris buildup.
Structural issues were also identified. The molding at the floor/wall juncture was broken or missing in several areas, including under the small hand sink at the front corner of the kitchen and along the wall near the cook line. This, too, was noted as a repeat violation.
Grease buildup was found on the hood filters, another repeat violation. Plumbing problems were also noted, with leaking drain lines under the hand sink and triple sink and standing water in the hand wash sink.
The inspection also highlighted lapses in hygiene and food safety practices. There was no handwashing sign at the front counter hand sink, and multiple employees were observed without hair restraints.
One employee failed to wash their hands before putting on gloves after leaving the cook line to mop the floor and move items to the cooler. The inspector reviewed proper procedures with the employee and manager, and the employee subsequently washed hands.
Tarka Karahi and Kabab will remain closed until all violations are addressed and a follow-up inspection confirms compliance with health and safety standards.
