In celebration of Irish-American Month, the city of Coral Springs has released the latest installment of its “Taste the Heritage” series, this episode highlighting Irish culture.
The video, filmed at Wings Plus, features city staff, including Lynn Martzall, Director of Marketing & Communications, swapping stories and pride in their Irish roots.
The ‘Taste of Heritage’ chat covers Irish culinary traditions, including the origins and ‘Americanized’ evolution of various Irish dishes, such as the sausage, mashed potatoes, and gravy ‘Bangers and Mash,’ which, ironically, is much of an authentic Irish tradition at all.
A significant focus throughout the chat is how versatile and prevalent potatoes are in Irish recipes, with the most often-used method of preparation being a long and slow’ boil.
The feature ends with a toast in memory of former Coral Springs Mayor and proud Irish-American Skip Campbell, who passed away in October of 2018.
In cheeky Irish fashion, the toast asks, “May God bless us and those who love us. And to our enemies, may God turn their hearts so they do love us. But if God may not turn their hearts, may he at least turn their ankles so we’ll know those bastards by their limp.”
The video concludes with the word “Sláinte,” a traditional Irish toast meaning “health,” spoken as a symbol of community and togetherness.
