Lilliana Garcia is enthusiastic about cooking and meal preparation. She leads the ProStart Culinary Arts program at Coral Springs High School.
“I have gained confidence by learning how to run a food service operation and to prepare high-quality meals,” said Garcia, a dual-enrolled senior at Atlantic Technical College who plans to become a culinary specialist in the U.S. Navy.
From March 8 to 9, the ProStart students will travel to Rosen Plaza in Orlando to compete in the Florida Restaurant and Lodging Association Educational Foundation ProStart Competition 2025. Last year, Coral Springs earned fourth place in the management competition. This year, Chef Aruna Lien, the senior teacher, hopes the team finishes in the top three.
The students will be judged on their culinary skills, management, edible centerpiece using fruits and vegetables, and waiter relays, in which they set a table correctly. “This is a demanding competition where they must show a variety of culinary and hospitality management skills,” she said.
The students also learn real-world skills. They can gain industry certification by passing the ServSafe exam, which is given by the National Restaurant Association. They know the fundamentals of food safety, how to prevent foodborne illnesses, and how to maintain a clean kitchen. According to Lien, this certification is recognized by many federal, state, and local jurisdictions.
Justin Bullman, a senior, has enjoyed the program and participating in competitions. He plans to pursue a career in fire rescue after high school. “Maybe I will cook meals when I am on duty at the fire station,” he said.
Some culinary students are already working in food service. Dylan Sanchez works at Cooper’s Hawk Winery and Restaurant in Coconut Creek. He prepares desserts and appetizers and is considered an excellent chef. “The work can be tedious, but I enjoy working at the restaurant,” he said.
Lien wants her students to succeed and enjoy preparing food. “Cooking can be a good way to relieve stress and improve mental health,” she said.
