Roots & Shoots Brings Sustainable Indoor Farming to Coral Springs

A new indoor farming venture is taking root in Coral Springs, promising fresh greens year-round.
Brianne and Kelly Oliveira have established the Roots & Shoots Microgreen Farm in a warehouse at Corporate Park, where they grow a variety of edible plants.
“We grow edible flowers, basil, cilantro, lettuce, and other greens,” said Brianne, adding that they sell their microgreens to local restaurants and to the public.
The greens grown at Roots & Shoots are placed on a vertical rack in soil-filled trays. The plants receive all the nutrients they need to grow. A special machine is used to consistently harvest the greens.
Indoor farming is becoming a key part of building a more sustainable and resilient food system. It uses 90 percent less water and land and yields higher per-square-foot yields. It can be harvested year-round, provides fresher food for urban areas, does not require pesticides, and is weather-resistant, according to Brianne.
Microgreens are nutrient-dense and packed with vitamins and antioxidants, up to 40 times more than mature plants. They offer a bold taste in a small leaf, according to Brianne.
Brianne is proud of her rise in the food industry. “I went from working in restaurant kitchens to supplying restaurants,” she said.
